Fiesta Sandwich Rolls

  • 8 oz / 2 cups sharp natural cheddar cheese – shredded
  • 4 hard boiled eggs – chopped
  • 1/2 cup tomato sauce
  • 1/4 cup chopped ripe olives
  • 2 Tbsp chopped mild green chilis
  • 2 Tbsp sliced green onions
  • 4 tsp vinegar
  • Dash of garlic salt
  • 6 hard rolls
  1. Mix ingredients (minus the rolls) into a large bowl.
  2. Slice tops off rolls or split them.
  3. Scoop out centers and fill with mix.
  4. Wrap each roll in aluminum foil.
  5. Cook at 400ºF for 15-20 minutes.
